For a while, this was the breakfast I made whenever I wanted something a little over the top. I already loved breakfast wraps and croissants on their own, so one morning I decided to combine them, and it turned out even better than I expected.

  • 4 eggs
  • 75 g cheddar cheese
  • 4 bacon strips
  • 1 avocado

Instructions

  1. Cook the bacon until crispy.
  2. Softly scramble the eggs.
  3. Slice the croissants in half.
  4. Place a croissant in the center of each tortilla.
  5. Add eggs, cheese, bacon, and avocado.
  6. Fold the tortilla tightly around the filling.
  7. Toast in a skillet until golden and crispy on both sides.
  8. Slice and serve immediately.

I usually don’t meal prep this recipe because the crispy tortilla and flaky croissant are what make it so good. However, you can cook the bacon, scramble the eggs, and prep the toppings ahead of time. When you’re ready to eat, simply assemble everything and toast the wrap for a fresh, crispy breakfast in minutes.

Tips

  • I always warm the croissant slightly before assembling, it makes the inside extra buttery and soft.
  • Don’t overfill the wrap. It’s tempting, but a tightly wrapped tortilla gets much crispier.
  • Cook the wrap over medium heat so the cheese melts before the outside gets too dark.
  • Whenever I make these, I let them rest for a minute before slicing. It helps everything stay together.
