Honestly, this isn’t my favorite recipe for meal prep because the salmon and flatbreads taste so much better fresh. The crispy texture softens quite a bit once stored, and the flatbread can become a little soggy from the whipped feta and toppings.
I’d definitely recommend prepping the whipped feta and vegetables ahead if you want to save time, but cooking the salmon and assembling the flatbreads fresh right before eating gives the best result by far.
