This creamy coconut chicken curry is a flavorful international dinner inspired by Thai cuisine. Tender chicken simmered in a rich coconut sauce with spices and vegetables. Perfect for a quick, comforting meal packed with flavor.
Ingredients
- 2 chicken breasts (cut into pieces)
- 1 can coconut milk (400ml)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 bell pepper (sliced)
- 1 tbsp curry paste (red or yellow)
- 1 tbsp olive oil
- 200g jasmine rice
- 1 tsp paprika powder
- Salt & pepper to taste
- Fresh cilantro (optional)
- Lime wedges (optional)
Instructions
- Cook rice according to package instructions.
- Heat oil in a large pan over medium heat.
- Add onion and garlic, cook until soft.
- Add chicken and cook 5–6 minutes.
- Stir in curry paste and paprika.
- Pour in coconut milk and stir well.
- Add bell pepper and simmer 10 minutes.
- Season with salt and pepper.
- Serve with rice and garnish with cilantro and lime.
