This creamy coconut chicken curry is a flavorful international dinner inspired by Thai cuisine. Tender chicken simmered in a rich coconut sauce with spices and vegetables. Perfect for a quick, comforting meal packed with flavor.

Ingredients

  • 2 chicken breasts (cut into pieces)
  • 1 can coconut milk (400ml)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (sliced)
  • 1 tbsp curry paste (red or yellow)
  • 1 tbsp olive oil
  • 200g jasmine rice
  • 1 tsp paprika powder
  • Salt & pepper to taste
  • Fresh cilantro (optional)
  • Lime wedges (optional)

Instructions

  1. Cook rice according to package instructions.
  2. Heat oil in a large pan over medium heat.
  3. Add onion and garlic, cook until soft.
  4. Add chicken and cook 5–6 minutes.
  5. Stir in curry paste and paprika.
  6. Pour in coconut milk and stir well.
  7. Add bell pepper and simmer 10 minutes.
  8. Season with salt and pepper.
  9. Serve with rice and garnish with cilantro and lime.
