Tender chicken served with sweet corn and warm rice, lightly seasoned for a balanced and comforting high-protein lunch.

Ingredients

  • 150g rice (white or brown)
  • 2 chicken breasts (300g total)
  • 1 cup sweet corn
  • 1 bell pepper
  • 1 handful spinach
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt & pepper
  • Optional: lime juice

Instructions

  1. Cook rice according to package instructions.
  2. Cut chicken into bite-size pieces.
  3. Chop bell pepper.
  4. Heat olive oil in a pan.
  5. Cook chicken for 5–6 minutes.
  6. Add corn and bell pepper.
  7. Cook another 4–5 minutes.
  8. Add spinach and stir.
  9. Serve over warm rice.
