A flavorful vegan rice bowl with crispy tofu, fresh vegetables, and a sticky homemade teriyaki sauce. Perfect for a quick, healthy, and satisfying meal.
Ingredients
- 200g firm tofu (cubed)
- 1 cup rice (jasmine or basmati)
- 1 cup broccoli (chopped)
- 1 carrot (sliced)
- 1 tbsp olive oil
- 1 tbsp sesame seeds (optional)
- 2 spring onions (optional)
- Teriyaki Sauce:
- 3 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tbsp rice vinegar (or lemon juice)
- 1 tsp garlic powder (or 1 clove garlic)
- 1 tsp cornstarch
- 3 tbsp water
Instructions
- Cook rice according to package instructions.
- Heat olive oil in a pan.
- Add tofu cubes and cook until golden and crispy (8–10 minutes).
- Add broccoli and carrot to the pan and cook 4–5 minutes.
- Mix soy sauce, maple syrup, rice vinegar, garlic, cornstarch, and water.
- Pour sauce over tofu and vegetables.
- Cook 2–3 minutes until sauce thickens.
- Serve rice in bowl, add tofu and vegetables.
- Top with sesame seeds and spring onions.
