A flavorful vegan rice bowl with crispy tofu, fresh vegetables, and a sticky homemade teriyaki sauce. Perfect for a quick, healthy, and satisfying meal.

Ingredients

  • 200g firm tofu (cubed)
  • 1 cup rice (jasmine or basmati)
  • 1 cup broccoli (chopped)
  • 1 carrot (sliced)
  • 1 tbsp olive oil
  • 1 tbsp sesame seeds (optional)
  • 2 spring onions (optional)
  • Teriyaki Sauce:
  • 3 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar (or lemon juice)
  • 1 tsp garlic powder (or 1 clove garlic)
  • 1 tsp cornstarch
  • 3 tbsp water

Instructions

  1. Cook rice according to package instructions.
  2. Heat olive oil in a pan.
  3. Add tofu cubes and cook until golden and crispy (8–10 minutes).
  4. Add broccoli and carrot to the pan and cook 4–5 minutes.
  5. Mix soy sauce, maple syrup, rice vinegar, garlic, cornstarch, and water.
  6. Pour sauce over tofu and vegetables.
  7. Cook 2–3 minutes until sauce thickens.
  8. Serve rice in bowl, add tofu and vegetables.
  9. Top with sesame seeds and spring onions.
