Ingredients
- 2 chicken breasts (cut into cubes)
- 120 g brown rice or jasmine rice
- 1 broccoli (cut into florets)
- 1 tablespoon olive oil
- 1 teaspoon garlic (minced)
- Healthy Teriyaki Sauce:
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 tablespoon water
- 1 teaspoon cornstarch (optional for thickness)
- Optional toppings:
- Sesame seeds
- Spring onions
- Chili flakes
Instructions
- Cook rice according to package instructions.
- Steam or boil broccoli for 4–5 minutes until tender.
- Heat olive oil in a pan over medium heat.
- Add chicken and cook until golden and cooked through.
- Add garlic and cook for 1 minute.
- Mix teriyaki sauce ingredients in a small bowl.
- Pour sauce over chicken and cook 2–3 minutes until slightly thickened.
- Divide rice into bowls.
- Add broccoli and teriyaki chicken on top.
- Add optional toppings and serve.
