A healthy homemade teriyaki chicken bowl with tender chicken, broccoli, and rice. A balanced dinner with protein, vegetables, and carbs for a satisfying meal.

Ingredients

  • 2 chicken breasts (cut into cubes)
  • 120 g brown rice or jasmine rice
  • 1 broccoli (cut into florets)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic (minced)
  • Healthy Teriyaki Sauce:
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 tablespoon water
  • 1 teaspoon cornstarch (optional for thickness)
  • Optional toppings:
  • Sesame seeds
  • Spring onions
  • Chili flakes

Instructions

  1. Cook rice according to package instructions.
  2. Steam or boil broccoli for 4–5 minutes until tender.
  3. Heat olive oil in a pan over medium heat.
  4. Add chicken and cook until golden and cooked through.
  5. Add garlic and cook for 1 minute.
  6. Mix teriyaki sauce ingredients in a small bowl.
  7. Pour sauce over chicken and cook 2–3 minutes until slightly thickened.
  8. Divide rice into bowls.
  9. Add broccoli and teriyaki chicken on top.
  10. Add optional toppings and serve.
