These wraps combine seasoned lean ground beef with sweet, tender sweet potato and a fresh lime-infused cottage cheese spread. Together with crunchy spinach and creamy avocado, they make for a balanced, high-protein meal that is both filling and flavorful.

Ingredients

  • 250 g lean ground beef
  • 2 medium sweet potatoes
  • 4 whole wheat wraps
  • 150 g cottage cheese
  • 1 avocado
  • 2 handfuls of spinach
  • 1 lime (juice + zest)
  • 1 tbsp olive oil
  • 1 tsp paprika powder
  • 1 tsp cumin
  • Chili powder, salt and pepper to taste

Instructions

  1. Prepare the sweet potatoes: Dice the sweet potatoes into cubes, toss with olive oil, salt, and pepper, and bake in the oven at 200°C (400°F) for 20–25 minutes.
  2. Cook the beef: Brown the ground beef in a pan, seasoning it with paprika, cumin, chili powder, salt, and pepper until fully cooked.
  3. Make the spread: In a small bowl, mix the cottage cheese with lime juice and zest to create a fresh, creamy sauce.
  4. Assemble the wraps: Spread the cottage cheese mixture onto each wrap, then add the spinach, cooked beef, roasted sweet potatoes, and avocado.
  5. Roll & serve: Roll them up tightly and, if desired, toast briefly in a dry pan for an extra crunch.
