Ingredients

  • 2 salmon fillets
  • 3 tbsp white miso paste
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 cup farro (uncooked)
  • 200 ml light coconut milk
  • Zest & juice of 1 lime
  • 1 bunch asparagus
  • 1 tbsp olive oil
  • 1 tsp chili flakes (optional)
  • Fresh cilantro for garnish
  • Salt & pepper to taste

Instructions

  1. Prepare glaze: Mix miso paste, honey, soy sauce, and sesame oil into a smooth glaze.
  2. Cook farro: Simmer farro in water for about 20 minutes until tender. Drain, then stir in coconut milk, lime zest, and lime juice.
  3. Roast salmon: Preheat oven to 200°C (400°F). Place salmon on a baking tray, brush with miso glaze, and roast for 12–15 minutes.
  4. Char asparagus: Heat olive oil in a pan and cook asparagus on high heat until slightly charred but still crisp (about 5–7 minutes). Season with salt, pepper, and chili flakes.
  5. Serve: Spoon coconut-lime farro onto plates, top with glazed salmon, and add asparagus on the side. Garnish with fresh cilantro.
