Ingredients
- 6–8 falafel (store-bought or homemade)
- 1/2 cucumber
- 1 cup cherry tomatoes
- Handful lettuce or spinach
- 2 tbsp hummus
- 1 tbsp olive oil
- Optional: pita bread or couscous
Instructions
- Cook falafel according to package instructions.
- Chop cucumber and tomatoes.
- Add lettuce to bowls.
- Add falafel on top.
- Add hummus and drizzle olive oil.
- Serve warm.
