This High Protein Chicken Mozzarella Toast is a warm, crispy, and satisfying lunch packed with lean chicken, melted mozzarella, and fresh greens. Perfect for a quick high-protein meal that’s both simple and delicious.

Ingredients

  • 2 slices whole wheat bread
  • 120g cooked chicken breast (sliced)
  • 30g mozzarella (light or regular)
  • Handful spinach or arugula
  • 1 tbsp Greek yogurt (optional)
  • Salt & pepper
  • Optional: chili flakes

Instructions

  1. Preheat oven or air fryer to 200°C
  2. Place bread slices on baking tray
  3. Add chicken evenly over bread
  4. Top with mozzarella
  5. Bake 6–8 minutes until cheese melts
  6. Add spinach and optional yogurt
  7. Season with salt, pepper and chili flakes
  8. Serve warm
