A colorful and balanced burrito bowl packed with lean protein, fiber-rich beans, and fresh vegetables. A healthy dinner that’s filling and full of flavor.

Ingredients

  • 2 chicken breasts (sliced)
  • 120 g brown rice or white rice
  • 1 cup black beans (rinsed & drained)
  • 1 avocado (sliced)
  • ½ cup corn
  • 1 cup cherry tomatoes (halved)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt & pepper to taste
  • Lime Dressing:
  • Juice of ½ lime
  • 1 tablespoon olive oil
  • Salt & pepper
  • Optional toppings:
  • Fresh cilantro
  • Greek yogurt or light sour cream
  • Chili flakes

Instructions

  1. Cook rice according to package instructions.
  2. Season chicken with paprika, salt, and pepper.
  3. Heat olive oil in a pan and cook chicken 5–6 minutes until cooked through.
  4. Warm black beans and corn in a small pan or microwave.
  5. Divide rice between bowls.
  6. Add chicken, black beans, corn, avocado, and tomatoes.
  7. Mix dressing ingredients and drizzle over bowls.
  8. Add optional toppings and serve.
