Ingredients
- Chicken:
- 2 chicken breasts (sliced)
- 1 tbsp olive oil
- 1 tsp oregano
- 1 tsp paprika
- ½ tsp garlic powder
- Salt & pepper
- Bowl:
- 200g rice or couscous
- 1 cucumber (chopped)
- 2 tomatoes (chopped)
- ½ red onion (sliced)
- Optional: feta cheese
- Tzatziki:
- 150g Greek yogurt
- ½ cucumber (grated)
- 1 clove garlic (minced)
- 1 tbsp lemon juice
- Salt & pepper
Instructions
- Cook rice or couscous according to package instructions.
- Mix chicken with olive oil and spices.
- Cook chicken in a pan for 6–8 minutes until golden.
- Mix tzatziki ingredients in a bowl.
- Prepare vegetables.
- Serve rice in bowls.
- Add chicken, vegetables and feta.
- Top with tzatziki sauce.
