A luxurious chocolate lava cake with a perfectly baked exterior and a warm, molten center. Perfect as a romantic dessert or a small indulgent treat.

Ingredients

  • 60g (2 oz) dark chocolate (70% cocoa)
  • 50g (3.5 tbsp) unsalted butter
  • 1 large egg
  • 1 egg yolk
  • 40g (3 tbsp) granulated sugar
  • 15g (2 tbsp) all-purpose flour
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Butter & cocoa powder (for greasing ramekins)

Instructions

  1. Preheat oven to 200°C (390°F).
  2. Grease 2 ramekins with butter and dust lightly with cocoa powder.
  3. Melt the chocolate and butter together until smooth.
  4. In a bowl, whisk egg, egg yolk, and sugar until slightly thick.
  5. Mix in the melted chocolate.
  6. Add vanilla, salt, and flour, and stir until just combined.
  7. Divide batter evenly between ramekins.
  8. Bake for 10–12 minutes until edges are set but center is soft.
  9. Rest for 1 minute, then invert onto plates and serve immediately..
