Ingredients
- For the crust:
- 100g chocolate cookies (crushed)
- 50g (3.5 tbsp) unsalted butter, melted
- For the filling:
- 120g (4 oz) dark chocolate (70%)
- 100ml heavy cream
- 1 tbsp butter
- 1 tsp vanilla extract
- Pinch of salt
- Optional toppings:
- Fresh berries
- Whipped cream
- Chocolate shavings
- Sea salt flakes
Instructions
- Prepare the crust
Mix crushed cookies with melted butter until combined. Press firmly into a small tart pan or dish. Chill in the fridge for 20 minutes. - Make the ganache
Heat the cream until just simmering (do not boil). Pour over chopped chocolate and let sit for 1–2 minutes. - Stir until smooth
Add butter, vanilla, and salt. Stir until glossy and fully combined. - Assemble
Pour the ganache into the chilled crust and smooth the top. - Chill
Refrigerate for at least 2 hours until set. - Serve
Slice and top with berries, whipped cream, or a sprinkle of sea salt.
