Ingredients
- 2 chicken breasts (cut into bite-size pieces)
- 200g jasmine rice
- 1 broccoli (cut into florets)
- 1 carrot (sliced thin)
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar (optional)
- 1 tbsp sesame oil or olive oil
- 2 cloves garlic (minced)
- 1 tsp grated ginger (optional)
- Sesame seeds (optional topping)
- Spring onions (optional topping)
Instructions
- Cook the rice according to package instructions.
- Heat oil in a pan over medium heat.
- Add chicken pieces and cook for 6–8 minutes until golden.
- Add garlic and ginger, cook for 1 minute.
- Mix soy sauce, honey, and rice vinegar in a small bowl.
- Pour sauce over chicken and simmer 3–4 minutes until thickened.
- Meanwhile, steam or stir-fry broccoli and carrots until tender.
- Serve rice in bowls, top with chicken and vegetables.
- Garnish with sesame seeds and spring onions.
