This easy Chicken Teriyaki Rice Bowl is a delicious international dinner inspired by Japanese flavors. Tender chicken coated in a sweet and savory teriyaki sauce, served with fluffy rice and fresh vegetables. Perfect for a quick weeknight meal that’s both healthy and satisfying.

Ingredients

  • 2 chicken breasts (cut into bite-size pieces)
  • 200g jasmine rice
  • 1 broccoli (cut into florets)
  • 1 carrot (sliced thin)
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar (optional)
  • 1 tbsp sesame oil or olive oil
  • 2 cloves garlic (minced)
  • 1 tsp grated ginger (optional)
  • Sesame seeds (optional topping)
  • Spring onions (optional topping)

Instructions

  1. Cook the rice according to package instructions.
  2. Heat oil in a pan over medium heat.
  3. Add chicken pieces and cook for 6–8 minutes until golden.
  4. Add garlic and ginger, cook for 1 minute.
  5. Mix soy sauce, honey, and rice vinegar in a small bowl.
  6. Pour sauce over chicken and simmer 3–4 minutes until thickened.
  7. Meanwhile, steam or stir-fry broccoli and carrots until tender.
  8. Serve rice in bowls, top with chicken and vegetables.
  9. Garnish with sesame seeds and spring onions.
