Soft, fluffy muffins filled with juicy blueberries and topped with a buttery crumble. Perfect for breakfast, brunch, or a sweet afternoon treat.

Ingredients

  • 150 g all-purpose flour
  • 75 g sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 pinch salt
  • 1 egg
  • 80 ml milk
  • 60 ml vegetable oil
  • 1 teaspoon vanilla extract
  • 100 g fresh blueberries
  • Crumble Topping:
  • 30 g flour
  • 20 g sugar
  • 20 g butter (cold, cubed)

Instructions

  1. Preheat oven to 180°C (350°F) and line a muffin tray.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk egg, milk, oil, and vanilla extract.
  4. Combine wet and dry ingredients and mix gently.
  5. Fold in the blueberries carefully.
  6. Divide the batter into 6 muffin cups.
  7. Make the Crumble:
  8. Mix flour, sugar, and butter with your fingers until crumbly.
  9. Sprinkle crumble topping over muffins.
  10. Bake:
  11. Bake for 18–20 minutes until golden brown.
  12. Let cool for 5 minutes before serving.
